LOADED HUMMUS PITAS

DO I HAVE TO USE PITA BREAD?

You don’t have to use pita. Naan is a fantastic substitute. Any solid slice of bread you have at hand can be used. This is a great recipe to use the last tortillas you’ve left on the side of your fridge for the past three weeks. (Is it the case for everyone else?) The most important thing is choosing bread you do not need to toast. However, if you want to toast the bread you’ve bought, do it. It is possible to warm the pita (or tortillas or naan) on the stove or a dry skillet at medium-low temperature or in a 350-degree preheated oven.

DO I HAVE TO USE HUMMUS?

For the most convenience, go for the soft hummus you can Hummusom the store. If it’s not in your budget, create your own. I’ve got some fantastic Hummus recipes that will take five minutes to prepare. For those who aren’t hummus lovers, try Greek yogurt or avocado mashed.

WHAT ELSE CAN I ADD TO THE LOADED HUMMUS PITAS?

This recipe is a lot of fun to modify and adaptable, which is a treat to my ears as we’re nearing the close of the week in my quest to utilize the leftover things and leftovers. Are you left with some leftover lettuce from the salad you made yesterday? Utilize them! Do you have any cut and diced radishes and raw onions left over from a taco take-out trip? Try it! Try adding:

Roasted summer vegetables

Chopped cauliflower florets

Chopped broccoli florets

Olives pitted, cut, and sliced

Sliced radish

Sweet peppers cut into slices

Onions pickled

Artichoke hearts

Shredded carrots

Asparagus ends

Chopped cold cuts

INGREDIENTS

One cucumber ($0.53)

1 cup grape tomatoes ($1.08)

1/4 onion red ($0.09)

8 kalamata olives ($0.75)

One tablespoon chopped parsley ($0.10)

2 oz. feta in a crumbled form ($0.82)

Four pitas ($1.99)

1 cup of hummus ($2.20)

Two teaHummus olive oil ($0.11)

One pinch salt ($0.01)

One pinch of chili ($0.01)

INSTRUCTIONS

Slice the cucumber into smaller quarter-inch pieces. Cut into half the grape tomatoes. Slice the red onion. Cut the parsley into small pieces and then crumble the feta.

To make the pitas, put 1/4 cup of Hummus on the top inHummusach pita. Add tomatoes, cucumbers, and red onion. Add pinch of pepper and salt. Add a bit of chopped parsley, crumbled feta, and a drizzle of olive oil.
